How to Make Your Mom Happy This Mothers’ Day

Mothers. Our superheroes. Our friends. Our protectors. Our biggest fans. We sure do love ‘em… but what the heck are we supposed to get them for Mothers’ Day?!


Flowers are cliché. She doesn’t need anymore “things.” And, she already told you not to get her any candy because it “goes right to her hips.”


No, what our moms REALLY want on their day of honor is attention from and quality time with her kids and/or loved ones. It’s science… look it up. 😉 And what better way to show that you care than by cooking momma a delicious, healthy, home-cooked meal that you get to enjoy together?


Tasty ethnic dishes can feel intimidating to attempt at home.


But here at Karen’s Spice Kitchen, we’ve simplified the process with our pre-measured, blended and packaged spice blends. BUTTER CHICKEN SOUTH AFRICAN BOBOTIE CHICKEN TIKKA MASALA


While the main dish is obviously important, the sides that are served alongside it can really make a meal incredible.


With warm weather on the horizon, and already here in some parts of the country, there are SO many options for colorful, filling sides that are chock full of yummy seasonal produce and delicious flavors.


All of our spice blends come with a list of suggested side dishes along with the recipes to make them, but here are a few fresh new ones for you to try out and pair with your Mothers’ Day feast:


CABBAGE SALAD

Mix 8 cups shredded green cabbage with 2 Tbsp. fresh parsley (chopped).

Whisk together 2 Tbsp. lemon juice, 2 Tbsp. extra virgin olive oil, 1 Tbsp. mustard, 1 Tbsp. honey, 1 tsp. garlic powder, 1/2 tsp. salt and 1/2 tsp. ground pepper.


Mix into the cabbage and parsley. Enjoy!


KATCHUMBER SALAD

1/2 medium red onion, finely diced

2 cups cherry tomatoes, halved

1 large English cucumber, diced

4 medium radishes, sliced very thin

1/4 cup chopped cilantro (or parsley if preferred)

2 tablespoons freshly squeezed lemon juice

1/8 teaspoon salt, or to taste

1/4 teaspoon ground black pepper, or to taste

1/4 teaspoon ground cumin


Toss all ingredients together and enjoy!


KALE SALAD

1 bunch kale

¼ cup raisins or currants

¼ cup toasted pine nuts, sliced almonds or pumpkin seeds

1 tablespoon lemon juice

1 tablespoon extra-virgin olive oil

Salt and pepper to taste


Wash kale and strip the leaves off the stems. Chop and put in a bowl. Add the olive oil, lemon juice and salt and pepper. Mix together well. Add the raisins/currants. Mix again. Just before serving, add the nuts/seeds and mix again. Enjoy!
